Citrus Glazed Chicken
Method
Trim chicken pieces and place in a bowl. Whisk together orange juice, Shef, ginger and pepper. Set aside half of the mixture, then pour remainder over chicken. Toss to coat, cover and refrigerate for 2 hours. Prepare vegetables such as potato, carrot and zucchini by cutting into equal lengths and shapes. Preheat oven to moderate temperature. Drain chicken and place in an ovenproof dish. Roast for 1 hour or until chicken is cooked, add vegetables. Serve chicken and vegetables with the mixture used for basting, reduced over high heat. Serves 2 people.
