Chicken Dijonnaise Loaded Croissant
A scrumptious croissant filled with a savoury blend of shredded chicken, Dijon mustard, whole egg mayonnaise, cream, and shallots.
Ingredients:
GROUP 1 – FILLING
320g chicken, shredded
65g Dijon mustard
65g whole Egg mayonnaise
12ml PURA Tuscan olive oil
25g shallots, diced
250ml water
100ml thickened cream
6g chicken stock powder
1g dried thyme
TOPPING
150g shredded tasty cheese
60g wholegrain mustard
Method
1) Prove and bake La Parisienne Large Butter Croissants as per instructions on pack – Proofing and Baking Guidelines
2) Place all ingredients from Group 1 into a bowl and mix until combined.
3) Take each croissant, cut in half and to the inside base add 70g of the filling.
4) Place on a baking tray and top with 12g of tasty cheese and 5g of wholegrain mustard.
5) Bake at 200c for approximately 5 minutes.
Makes approximately 12 large croissants
