Chicken Pesto & Mayo Loaded Croissant
A mouthwatering croissant filled with a savory blend of shredded chicken, basil pesto, mayonnaise, cream, and diced tomatoes.
Ingredients:
GROUP 1 – FILLING
350g chicken, shredded
110g basil Pesto
100g whole egg mayonnaise
9g PURA Tuscan olive oil
9g minced garlic
190g tomatoes, diced
80ml thickened cream
TOPPING
150g tasty cheese
12g dried basil
Method
1) Prove and bake La Parisienne Large Butter Croissant as per instructions on pack – Proofing and Baking Guidelines
2) Place all ingredients from Group 1 into a bowl and mix until combined.
3) Take each croissant, cut in half and to the inside base add 70g of the filling.
4) Place on a baking tray and top with 12g of tasty cheese and 1g dried basil.
5) Bake at 200°c for approximately 5 minutes.
Makes approximately 12 large croissants
