Forest Mushroom, Brie & Spinach Loaded Croissant
A delicious loaded croissant with a tasty filling of forest mushrooms, creamy Brie and fresh spinach leaves.
Ingredients:
GROUP 1 – FILLING
400g forest mushrooms
200g leek
100g butter
10g salt
GROUP 2
300 Brie, sliced
85 baby spinach leaves
TOPPING
300g Brie, sliced
Method
1) Prove and bake La Parisienne Large Butter Croissant as per instructions on pack – Proofing and Baking Guidelines
2) Place all ingredients from Group 1 into a fry pan and saute for 7 minutes. Allow to cool for 5 minutes then drain off extra liquid.
3) Take each croissant, cut in half and to the inside base add 25g Brie, then 70g mushroom filling mixture, followed by 7g of baby spinach.
4) Place on a baking tray and top with 25g Brie.
5) Bake at 200c for approximately 5 minutes.
Makes approximately 12 large croissants
