Mediterranean Lamb Loaded Croissant
A mouthwatering croissant filled with tender, slow-cooked shredded lamb, blended with a flavorful PURA Tuscan Blend yoghurt sauce, and topped with an extra drizzle of the same creamy sauce.
Ingredients:
GROUP 1 – PURA TUSCAN BLEND YOGHURT SAUCE
125g Greek Yoghurt
8g castor Sugar
80g Pura Tuscan Blend Oil
5g crushed Garlic
2g salt
50g fresh lemon juice
1g ground black pepper
1g ground cumin
GROUP 2
675g shredded cooked lamb
GROUP 3
100g rocket leaves
DRIZZLE YOGHURT TOPPING
80g Greek yoghurt
40g cream cheese
50g icing sugar
Method
1) Prove and bake La Parisienne Large Butter Croissants as per instructions on pack – Proofing and Baking Guidelines
2) Place all ingredients in a bowl & mix
3) Add cooked diced lamb to Group 1.
4) Take one croissant and cut it in half and add 70g of the filling followed by 8g of rocket leaves. Repeat with the remaining croissants.
5) Place on a baking tray & drizzle with 10g of the PURA Tuscan Blend yoghurt.
6) Bake at 200c for approximately 5 minutes.
